Ingredients

Instructions

  1. Set aside 2 tablespoons of the milk. Warm the rest in a saucepan over medium heat, then mix it in a jug with the yeast and honey and leave for 10 minutes, until frothy.
  2. Put the flour and 2 teaspoons of sea salt in a large bowl and make a well. Add the 100g butter and rub it in with your fingers into small pieces.
  3. Pour in the warm milk mixture slowly and bring it together into a rough dough.
  4. Knead on a floured surface for 5 minutes until smooth. Put in a lightly greased bowl, cover and leave for 1 hour, until doubled.
  5. Lightly oil a 25 x 35cm roasting tray. Divide the dough into 45 pieces, roll each into a ball and arrange evenly spaced in the tray. Cover and prove for another hour, until doubled again.
  6. Preheat the oven to 160°C/325°F/gas 4. Brush the balls with milk and bake on the bottom shelf for 30 minutes, until golden.
  7. Meanwhile, make the wild garlic butter: boil a kettle. Put the wild garlic leaves in a large bowl, pour boiling water over for 30 seconds, then move straight to iced water. Drain, pat dry, and blend in a food processor with the 500g butter and 1 teaspoon salt until smooth.
  8. Once the bread is baked, spoon over 4 tablespoons of the wild garlic butter and serve.
