Ingredients

Instructions

  1. Toss the chicken wings with the fish sauce in a dish or zip-top bag and marinate for 20–30 minutes, turning them halfway through.
  2. Remove the wings and pat them dry with paper towel. If using, press ground pepper onto the skin.
  3. Lay the wings on a plate and dust rice flour over both sides, then shake off any excess so they have only a thin coating.
  4. For shallow frying: pour oil about ΒΌ inch deep into a 12-inch skillet and heat it. Place the wings thick-skin side down and fry over medium heat for about 4 minutes, until deep golden brown.
  5. Flip the wings and fry 2–3 more minutes until the chicken is cooked through. Drain on paper towel.
  6. For deep frying instead: heat oil to 375Β°F and fry for 4–5 minutes, until golden brown and cooked through.
  7. For the air fryer (less crispy): place the wings in the basket thicker-skin side up, spray or brush with oil, and air fry at 400Β°F (200Β°C) for 12–15 minutes, until cooked through. No need to flip.
  8. Serve hot, with sweet chili sauce for dipping if you like.
