Preparación

  1. Wash the bok choy and cut it into quarters along the stem. Cut the green onions into small pieces.
  2. Bring a large pot of water to a rolling boil on high heat. Spread the noodles out, then cook them for about 60 seconds.
  3. Dunk the noodles in cold water for a few seconds, then return them to the pot for 15 to 20 seconds. Transfer to a bowl and toss with olive oil.
  4. Bring the water and chicken broth to a boil, then add the olive oil and salt. Add the bok choy, cover and cook on high about 1 to 2 minutes until the pot returns to a boil.
  5. Stir in the fish sauce, sesame oil and white pepper, then taste and adjust.
  6. Add the shrimp to the broth and cook about 1 minute, until they turn orange. Plate them on the noodles along with the bok choy.
  7. Boil the wontons in vigorously boiling water for 3 to 5 minutes, until they float. Place them on the noodles, pour in the broth and garnish with green onion.
