Ingredients

Instructions

  1. Rinse the Jasmine rice in a small saucepan, draining 2-3 times. Add 1 cup of water and bring to a boil over medium-high heat.
  2. Once bubbling, lower the heat to medium-low, cover and cook for 15 minutes.
  3. Turn off the heat and let the rice steam, covered, for another 10 minutes.
  4. Finely chop the garlic. Roughly chop the green onions. Remove the seeds from the dried red chili peppers, then roughly chop the peppers.
  5. Transfer the cooked rice to a large mixing bowl. Fluff it with a rice paddle and spread it in a thin layer. Let it cool for about 25-30 minutes.
  6. Heat a nonstick pan over medium-low heat. Add the chili oil, then the green onions, garlic and dried red chili peppers. Sauté for 1-2 minutes.
  7. Raise the heat to medium, add the rice and stir.
  8. Add the soy sauce and dark soy sauce. Sauté for another 4-5 minutes. Serve with a little extra chili oil drizzled on top.
