Ingredients
- Oil2 tsp
- Onion · chopped¼ cups
- Garlic2 cloves
- Flour1 tbsp
- Cashew milk1 cup
- Italian seasoning1 tsp
- Black pepper¼ tsp
- Salt¾ tsp
- Garlic powder½ tsp
- Onion powder½ tsp
- Parmesan cheese2–3 tbsp + ¼ cups
- Spinach · frozen½ cups
- White bean15
- Delicata squash1
- Breadcrumb½ cups
- Almond flour2 tbsp
- Mozzarella cheese¼ cups
- Pepper flakes¼ tsp
- Oregano½ tsp
Instructions
- Preheat the oven to 410°F (210°C).
- Heat the oil in a skillet over medium heat, add the onion, garlic and a pinch of salt, and cook until the onion turns translucent, about 3 to 4 minutes.
- Stir in the flour and cook for about half a minute. Add the spices, herbs and 1/2 cup of the non-dairy milk, mixing well to break up lumps, then add the rest of the milk and stir again.
- Bring to a boil, then stir in the vegan parmesan, spinach and white beans and turn off the heat. Taste and adjust salt and seasoning, adding a dash of lemon if you want more tang.
- Spread the bean mixture evenly over the bottom of a 9 x 11-inch casserole dish, or similar size, in no more than two layers of squash.
- Arrange the delicata squash half-moon slices over the beans, slightly overlapping.
- Mix the topping ingredients in a small bowl, sprinkle over the squash, then drizzle with 1 to 2 teaspoons of extra virgin olive oil.
- Bake for 25 to 30 minutes, checking after 15 minutes and covering with parchment if the topping browns too much. Check the squash at 25 minutes and bake 5 to 10 minutes more if needed, until a toothpick slides in easily. Rest for a few minutes before serving.
