Ingredients

Instructions

  1. Crack the eggs into a bowl, add the sugar and grate in the zest of half a lemon. Mix with a fork.
  2. Add the cold butter in small pieces, then the baking powder, and gradually work in the flour until you have a smooth, uniform dough ball.
  3. Wrap the dough and chill it in the fridge for 30 minutes.
  4. Meanwhile, make the lemon custard following your lemon pastry cream recipe, and let it cool.
  5. After resting, roll out about two-thirds of the pastry on parchment.
  6. Transfer the pastry to a 24 to 26 cm tart pan that has been greased and floured. Press it into the base and sides, trim the excess and prick the base with a fork.
  7. Spread the cooled custard evenly over the base.
  8. Roll out the remaining pastry, cut it into strips and lay them over the tart in a lattice pattern.
  9. Bake in a preheated conventional oven at 180°C (350°F) for about 40 minutes, until the pastry is lightly golden.
  10. Let the tart cool completely before removing it from the pan, then dust with powdered sugar.
