Your Bread Isn't Ready To Cut
Ingredients
- Bread flour4 ⅔ cups
- Yeast2 tsp
- Salt2 tsp
- Lard3 tbsp
Instructions
- In a stand mixer with the dough hook, combine the flour, instant yeast and salt.
- Stir the water and melted lard together, pour into the flour and mix on low until a shaggy dough forms.
- Raise the speed to medium and knead about 8 minutes, until the dough is smooth, elastic and cleans the bowl sides.
- Put the dough in a lightly greased bowl, cover, and let rise in a warm place about 2 hours, until doubled.
- Grease an 8-inch (20 cm) square cake pan.
- Punch down the dough and divide it into 4 equal pieces (about 9½ oz / 270 g each).
- Shape each piece into a taut ball by tucking the edges into the centre, turning it seam-side down and rolling it on an unfloured surface.
- Place the balls seam-side down in the pan, spaced evenly apart. Dust the tops generously with flour, cover, and proof about 2 hours, until doubled.
- Near the end of the proof, preheat the oven to 450°F (225°C).
- Bake 35 to 45 minutes, until deeply browned and hollow-sounding when tapped.
- Take the loaves out of the pan immediately and cool completely on a wire rack.
