Ingredients
- Rice16 oz
- Beef8 oz
- Ginger1 oz
- Scallion2 pieces
- Egg3
- Oyster sauce1 tbsp
- Soy sauce3 tsp
- White pepperΒΌ tsp + 1 dash
- Shaoxing wine1 tsp
- Cornstarch1 tsp
- Salt1 dash
- Dark soy sauce1 tsp
- Sesame oil1 tbsp
Instructions
- If using fresh rice, cook it in a rice cooker with a little less water than usual, since drier rice fries better. If using leftover rice, microwave it for 60 to 90 seconds until warm and break up the clumps.
- Cut the ginger into thin slices, then into thin strips. Dice the green onion finely and keep it apart from the ginger.
- Crack the eggs into a bowl without beating them.
- Slice the beef thinly against the grain, cutting long pieces into shorter chunks first if needed.
- Rinse the beef in cold water until the red colour washes out, then drain and squeeze out the excess water.
- Mix the oyster sauce, light soy sauce, white pepper, cooking wine, cornstarch and water into a marinade, then mix it into the beef until well combined.
- Once the rice is cooked, fluff it up. Add 1/4 teaspoon salt to the eggs and beat well.
- Heat a wok on high. Add 1 tablespoon oil and swirl to coat the wok.
- Pour in the beaten eggs and stir constantly for about 20 seconds on high heat, until nearly cooked but still moist. Transfer to a bowl.
- Add 1 tablespoon oil to the wok and spread the beef out. Let it brown for about 20 seconds, flip and brown the other side for another 20 seconds. Cook until about 80% done, then transfer to a bowl. Raise the heat if the beef isn't browning.
- Stir-fry the ginger in the leftover oil for 15 to 20 seconds, until fragrant.
- Add the rice, spread it out and drizzle about 1 tablespoon oil around the edge of the wok. Lower the heat and let the bottom layer fry undisturbed for about 30 seconds, then break up the grains, mix with the ginger and cook for about 2 minutes, leaving it still in 15-second stretches so it crackles.
- Sprinkle and drizzle the white pepper, salt and light soy sauce around the rice, adding about 1 teaspoon oil around the edge if it sticks. Add the dark soy sauce for colour, then stir well and cook for about 1 minute.
- Return the beef and egg to the wok and stir-fry quickly for about 30 seconds until well combined.
- Drizzle the sesame oil over the top, add the chopped green onion and mix. Turn off the heat and serve.
