🦐 Your new favorite shrimp dish, haha (Salt & Pepper Shrimp 椒鹽蝦)
Ingredients
- Shrimp14 oz
- Garlic2 cloves + ½ tsp + 1 tsp
- Red onion½ oz
- Bell pepper½ oz
- Scallion2 stalks
- Chili pepper2 pieces
- Corn oil5 oz + 1 tsp
- Cornstarch2 tbsp
- Salt0.2 tsp
- White pepper¼ tsp
Instructions
- Cut the red onion and red bell pepper (about a quarter of the pepper) into small dice; trim the green onions and dice the rest; mince the garlic; and dice the Thai chilies if using.
- Mix the garlic salt, salt and white pepper in a bowl for the dry seasoning.
- Devein the shrimp, remove the legs and antennae, and cut off the front of the head below the eyes. Optionally, snip a triangle from the tail. Cut a shallow slit down the back of large shrimp.
- Pat the shrimp dry with paper towel.
- Toss the shrimp with 1 tsp garlic salt, then toss with 2 tbsp cornstarch, adding it a little at a time for an even coating.
- Heat the wok over high heat and add 5 oz corn oil until it reaches 375°F (190°C). Small bubbles should form around a wooden chopstick dipped in.
- Fry a batch of about 8 large shrimp, moving them around, for 40-50 seconds. Remove them, let the oil return to 375°F, then fry the rest in batches.
- Turn off the heat and let the oil cool a bit. Strain the oil into a bowl, keeping it for other cooking, and wipe the outside of the wok.
- Return the wok to low heat and add 1 tsp corn oil. Fry the garlic for 15-20 seconds until fragrant, then add the onion, bell pepper, chilies and white parts of the green onion. Stir-fry for 30-40 seconds, lowering the heat if anything browns or burns.
- Add the fried shrimp and stir-fry quickly, then add the remaining green onion.
- Sprinkle in the dry seasoning mix while stir-frying, adding as much as needed to coat evenly.
- When seasoned to taste, turn off the heat and serve.
