🤤 Your new favorite tofu dish, guaranteed. (椒鹽豆腐)
Ingredients
- Tofu16 oz
- Scallion3 stalks
- Bell pepper2 oz
- Garlic2 cloves + 1 tbsp
- Salt1 tsp
- Egg½
- Cornstarch6 tbsp
- Oil16 oz + 2 tbsp
- White pepper¼ tsp
Instructions
- Dice the white parts of the green onions and set aside the greens. Halve the bell peppers, scoop out the core and seeds, and dice them. Mince the garlic finely.
- Drain the tofu, rinse it, and cut it into about 36 cubes.
- Bring water to a boil in a pot over high heat, then add the salt and stir to dissolve. Add the tofu and cook covered for 3 minutes, then lower the heat to low, uncover, and cook for 2 more minutes.
- Drain the tofu in a colander and let it cool slightly. Spread it in one layer on a paper towel or kitchen towel, cover with another towel, and gently press to remove excess moisture.
- Put the beaten egg in a bowl, add the tofu, and gently mix to coat. Transfer the cubes to a plate of cornstarch in a single layer, sprinkle more cornstarch on top, and toss with chopsticks until every piece is evenly coated.
- Heat the oil in a large pot over high heat. While it heats, mix the garlic salt and white pepper in a small bowl.
- Fry the tofu in batches in a spider strainer. When the oil reaches 400°F (200°C), lower the tofu in and leave it undisturbed until the crust sets. Then add the rest, placing pieces along the sides of the pot, and gently mix.
- Fry until golden brown, about 5 minutes at 360-380°F (180-190°C). Turn off the heat, remove the tofu, and let the excess oil drain.
- Heat a wok over high heat with 2 tbsp of the frying oil until just before it shimmers or smokes. Add the dried chili and fry for 8 seconds, then remove it.
- Add the minced garlic and fry for 15 seconds, stirring constantly. Add the diced bell pepper and green onion whites and fry for 20-25 seconds, stirring constantly.
- Add the fried tofu and stir-fry for 10 seconds. While stirring constantly, sprinkle the garlic salt and white pepper mixture over everything until the tofu is evenly coated. Turn off the heat and serve, scooping up the vegetable bits from the wok.
