Zataar & Cheese Pull-Apart Scrolls
Ingredients
- Flour2 ½ cups
- Yeast · dried7 g
- Salt2 tsp
- Sugar1 tsp
- Olive oil3 tbsp
- Zataar3 tbsp
- Mozarella100 g
- Parmesan cheese100 g
- Feta cheese100 g
Instructions
- Put the yeast, salt and sugar in a large bowl with 1 cup of warm water. Leave for 5 minutes until frothy.
- Put the sifted flour in a separate bowl, make a well in the centre, pour in the yeast mixture and mix until just combined.
- Turn the dough onto a lightly floured surface and knead for about 10 minutes until smooth.
- Place the dough in a lightly greased bowl, cover and leave in a warm, draught-free place for about 1 hour, until doubled in size.
- Meanwhile, mix the zaatar and olive oil into a paste.
- Grease a 30 cm x 24 cm (approximately) ovenproof pan.
- Punch down the dough and knead until it returns to its original size. On a floured surface, roll it into a large rectangle about 47 cm x 30 cm. Spread the zaatar paste over it and sprinkle evenly with the mozzarella, parmesan and crumbled feta.
- Roll up from the long edge to enclose the filling. Cut the roll into 2 cm thick portions and place them face up, side by side, in the pan. Cover and leave in a warm, draught-free place for 30 minutes to rise.
- Preheat the oven to 200°C. Lightly brush the rolls with a little extra oil. When the pan goes in the oven, reduce the temperature to 180°C and bake for 30 minutes, or until golden.
