How to Make CHICKEN PASTA Like an Italian
Ingredients
- Chicken thigh6
- Onion½
- Carrot1
- Celery1
- Penne300 g
- Rosemary1
- Passata2 bottles
- White wine1 glass
- Vegetable broth1 l
- Extra virgin olive oil
- Salt
- Black pepper
- Parsley
- Pecorino cheese
Instructions
- Heat 5 tablespoons of extra virgin olive oil in a large pot over medium heat.
- Add the chopped carrot, onion and celery and cook for about 10 minutes, stirring occasionally, until tender.
- Add the chicken thighs and brown for a few minutes on each side, then add the rosemary stem (or leaves pulled off) and scatter it over the chicken.
- Pour in one glass of white wine and turn the chicken again so both sides cook well. Let the wine evaporate slowly, moving the chicken so it does not stick, and lower the heat if needed so the chicken cooks gently and becomes tender.
- Once the wine has evaporated, add the two bottles of passata and stir. Season with salt and pepper, then add about 200 ml (0.8 cups) of stock.
- Simmer on medium-low heat for about 2 hours with the lid on, stirring now and then. If the liquid reduces too much, add more stock.
- After 20 to 30 minutes, add another 200 ml (0.8 cups) of stock and stir. After another 20 to 30 minutes, add another 200 ml (0.8 cups) of stock again and cook for a further 50 minutes to 1 hour.
- While the sauce finishes, bring a large pot of water to the boil and add a tablespoon of rock salt. Cook the penne according to the packet instructions so it finishes at the same time as the sauce.
- A couple of minutes before the pasta is ready, heat a few tablespoons of extra virgin olive oil in a large frying pan over medium heat and add four large scoops of the sauce (more for a bigger batch of pasta). Spread it out and cook gently for a few minutes, breaking up any large chicken pieces with a wooden spoon.
- Before draining the pasta, reserve a mug of the pasta water. Drain the pasta and add it to the pan with half a mug of pasta water. Mix gently until the pasta is well coated.
- Once the pasta has absorbed the sauce, remove the pan from the heat, add a couple of tablespoons of grated pecorino romano and toss to combine.
- Let the remaining sauce cool, then portion it into containers and freeze.
