Ingredients

Instructions

  1. Preheat the oven to 180°C.
  2. Cut the sausages into pieces about 1 cm.
  3. Spread the baby potatoes and sweet potato in the tray.
  4. Add the zucchini and carrot and spread them around.
  5. Add the garlic cloves whole on either side of the tray, pushed to the bottom, or cut them smaller and scatter them among the vegetables.
  6. Arrange the sausage pieces on top of the vegetables, about 3 cm apart, so they brown first.
  7. Sprinkle generously with salt and add a generous amount of mixed herbs.
  8. Drizzle with at least 4–5 tablespoons of extra virgin olive oil.
  9. Bake for 10 minutes, then remove the tray and check that the sausages have started to cook.
  10. Pour the tomato passata over the ingredients and mix gently but thoroughly with a wooden spoon.
  11. Tear the basil leaves by hand and add them to the mixture.
  12. Return the tray to the oven for at least 45 minutes, depending on your oven.
  13. Every 10 minutes or so, take the tray out and stir carefully with a wooden spoon.
  14. The baby potatoes take longest. Test one after 45 minutes; if still firm, bake another 10 minutes.
