Orecchiette Sausage Pasta with Creamy Tomato Sauce
Ingredients
- Orecchiette400 g
- Olive oil1 tbsp
- Garlic2
- Sausage500 g
- White wine¼ cups
- Passata1 cup
- Cream¾ cups
- Milk¾ cups
- Parmesan cheese⅓ cups
- Italian seasoning1 tsp
- Chili flake · flakes¼ tsp
- Each salt and pepper¼ tsp
- Kale3 cups
Instructions
- Cook the pasta in a large pot of boiling water for the packet time minus 1 minute. Just before draining, scoop out 1 cup of the cooking water and set it aside.
- Heat the oil in a very large skillet over high heat. Add the garlic and cook for 15 seconds.
- Add the sausage meat, breaking it up, and cook until little golden bits form, about 4 minutes.
- Add the wine and scrape the bottom of the pan to lift the golden bits. Let the wine evaporate until its winey smell is gone.
- Add the tomato passata, cream, milk, parmesan, Italian herbs, red pepper flakes, salt and pepper. Stir well, bring to a simmer, then reduce to low and simmer gently for 2 minutes.
- Add the drained pasta and kale and toss for 1 minute to coat. If the sauce gets too thick, loosen it with some of the reserved pasta water.
- Serve immediately, topped with freshly grated parmesan.
