This 15 MINUTE GOURMET PASTA with Salami Will Be Your New Favorite Weeknight Meal
Ingredients
- Penne300 g
- Salami1
- Onion½
- Passata1 bottle
- Basil1
- Salt
- Black pepper
- Extra virgin olive oil
Instructions
- Peel the salami and cut it into thin strips.
- Heat a large pan on high, add a generous amount of olive oil, then a splash of water and the onion; the water helps stop the onion burning.
- Cook the onion for about 5 minutes, stirring now and then.
- Meanwhile, bring a large pot of water to the boil and add 1 tbsp rock salt to dissolve.
- Add the pasta and stir now and then; cook for the time on the packet.
- When the onion is caramelised, add the salami strips and stir constantly, as they cook quickly.
- Stir in the passata, reduce to medium, season with salt and pepper and simmer for 5-7 minutes.
- Take the sauce off the heat if the pasta is not yet ready, let it rest briefly, then tear in basil leaves and stir.
- When the pasta is al dente, reserve a mug of pasta water and drain.
- Return the sauce to low heat, add the pasta and toss well. If it looks dry, add a little reserved pasta water and toss gently.
