Ingredients

Instructions

  1. Microwave the chopped onion, covered loosely with cling wrap, for 1½ minutes at 600W, then uncover and let it cool.
  2. Wrap the tofu block in 3 sheets of kitchen paper and put it on a microwave-safe plate. Set a flat microwave-safe plate on top and microwave for 3 minutes at 600W.
  3. Unwrap the tofu, return it to the plate, and place a small flat plate or drop lid with no holes on top. Press down with both hands, tilting the plate to squeeze out as much water as possible, until the tofu weighs 210-225g (7.4-7.9oz), about 25-30% less than the original 300g (10.6oz).
  4. Put the pork mince, beef mince, salt and pepper in a bowl and mix well, flattening the meat until the mixture is pasty and sticky.
  5. Add the tofu and crumble it by hand while mixing, breaking large pieces until none is bigger than 5mm (preferably smaller).
  6. Add the cooled onion and the egg and mix until everything is evenly combined.
  7. Divide the mixture into 4 equal portions. Shape each into a ball, toss it between your hands several times to remove air, then flatten it into an oval about 2.5cm (1 inch) thick.
  8. Press the centre of each patty slightly so it is thinner than the edge, since it will bulge when cooked.
  9. Heat 1 tbsp oil in a large frying pan over medium heat. Add the 4 patties and cook a couple of minutes until the bottom is nicely browned.
  10. Flip the patties, lower the heat to medium-low or low, cover with a lid, and cook 4-5 minutes until cooked through. Turn off the heat.
  11. Make the sauce while the patties cook: bring all the tomato sauce ingredients to a boil in a pot, stirring occasionally. Lower the heat and simmer, stirring constantly, for about a minute to thicken, then remove from the heat.
  12. Serve each patty right away, topped with the sauce.
